Ingredients
- 1 ounce lavender syrup
- ½ ounce lemon juice
- 2-3 lemon wheels
- Sparkling water
- 2 ounces Empress 1908 gin see notes
- Lavender flower to garnish
Method
- Fill a tall glass with crushed ice. Pour in the lavender syrup and lemon juice, then place a few lemon wheels in the glass. Fill the glass with sparkling water, leaving a ½ inch space at the top. Gently stir.1 ounce lavender syrup, ½ ounce lemon juice, Sparkling water, 2-3 lemon wheels

- Slowly pour the gin into the glass over the back of a spoon so it floats on top. Add a straw and garnish with a lavender flower.2 ounces Empress 1908 gin, Lavender flower

Notes
If you are using a clear gin, you can simply mix it in rather than float it on top.
