The clover club is a bright, elegant cocktail with beautiful raspberry flavor and a soft, frothy top. It's one of those classic drinks I love making when I want something that feels a little special but is still simple to shake together.

The base is straightforward: vodka (or gin, if you prefer), dry vermouth, fresh lemon juice, and raspberry syrup for sweetness and color. When it's shaken until icy cold, the lemon and raspberry create a lovely balance of tart and sweet that I always come back to.

To finish, a cocktail foamer or egg white creates the drink's signature silky foam. I like to garnish it with a few fresh raspberries and a twist of lemon peel for a simple, elegant finish.

Clover Club Cocktail (with fresh raspberry syrup)

A classic clover club cocktail made with vodka or gin, raspberry syrup, lemon juice, and dry vermouth. Shaken until frothy and garnished with raspberries.

Ingredients
  

  • 1 ½ ounces vodka or gin
  • ½ ounce dry vermouth
  • ½ ounce raspberry syrup recipe below
  • ½ ounce lemon juice
  • Cocktail foamer or an egg white
  • Raspberries and lemon peel to serve
Raspberry Syrup
  • ½ cup raspberries fresh or frozen
  • ½ cup granulated sugar
  • 1 cup water

Method
 

  1. Fill a cocktail shaker or jar halfway full with ice. Add the vodka, dry vermouth, raspberry syrup, lemon juice, and cocktail foamer or egg white.

  2. Put the lid on tightly and shake for 30 seconds to work up the foam.

  3. Strain into a martini glass and garnish with raspberries and a lemon peel.

Raspberry Syrup
  1. Place the raspberries, sugar, and water into a small pot over high heat. Bring the pot to a boil, then reduce the heat to low, cover, and simmer for 10 minutes. Remove the pot from the heat and use a spoon to skim off the foam.
    ½ cup raspberries, ½ cup granulated sugar, 1 cup water

  2. Strain the syrup through a fine-mesh sieve set over a bowl. DO NOT push on the raspberries or the syrup will be cloudy. Let it drain, without pressing on the berries, for at least 5 minutes.

Notes

Raspberry syrup: You'll have more than you need for this recipe. Leftovers can be stored in a clean, glass jar in your fridge for up to 2 weeks.
