Strawberry Basil Mojito

This strawberry basil mojito is a fresh, summery twist on the classic-bright, fizzy, and full of flavor. Sweet strawberries are turned into a quick simple syrup, then mixed with mint, basil, lime, and white rum for a drink that's refreshing with just a hint of something unexpected.

I love how the basil adds a soft, peppery note that plays beautifully with the ripe strawberries, while the mint keeps that familiar cooling finish. The lime brings everything into balance, giving the drink a crisp, citrusy edge.

Make a strawberry mojito pitcher

This recipe makes one mojito; for summer entertaining, you can easily turn it into a pitcher of strawberry basil mojitos.

You only need to use cups, not ounces. Muddle 1 cup of strawberry syrup with a handful of basil and mint leaves. Strain it into a pitcher, then stir in 1 cup of white rum, ½ cup of lemon juice, and 2 cups of soda water. You can double or triple the recipe as needed.

Strawberry Basil Mojito

I make my strawberry basil mojito with strawberry simple syrup, fresh mint, basil, lime, white rum, and soda water. It's refreshing, lightly sweet, and beautifully balanced.

Ingredients
  

  • 6 large mint leaves
  • 3 large basil leaves
  • 1 ounce strawberry syrup recipe below
  • 1 ounce white rum
  • ½ ounce fresh lemon juice
  • 2 ounces soda water
  • Sliced strawberries, mint, and basil leaves to garnish
Strawberry Syrup
  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup chopped strawberries

Method
 

  1. Begin by making the strawberry syrup. Combine the water, sugar, and strawberries in a pot, then bring to a boil. Reduce the heat to low and simmer for 5 minutes, mashing the strawberries with a spoon when they're soft.

  2. Remove the pot from the heat, let it cool slightly, then strain it through a fine-mesh sieve. See notes.
  3. Add the mint, basil, and simple syrup to a cocktail shaker and muddle for about 30 seconds. Put a handful of ice into the shaker, add the rum and lemon juice, and stir until it's cold.

  4. Strain your strawberry mojito into a tall, ice-filled glass, top it with soda water, and garnish with strawberries, mint, and basil.

Notes

Quantity: This recipe makes enough strawberry simple syrup for 8 mojitos. Store any leftover syrup in your fridge for up to a month. 
Strawberries: Don't discard the strawberries after you make the syrup - they're delicious! Serve them as a strawberry compote or even stir a little into a cocktail.
To make a pitcher, use cups instead of ounces. Muddle 1 cup of strawberry simple syrup with a handful of basil and mint leaves. Strain it into a pitcher, then stir in 1 cup of white rum, ½ cup of lemon juice, and 2 cups of soda water. You can double or triple the recipe as needed. Add a handful of basil leaves and some strawberries to the pitcher to make it look pretty!
Mocktail: Let everyone join in the party by omitting the rum for people who don't want alcohol.
