Mojito Jello Shots with Coconut and Raspberry

Ingredients  

  • ¾ cup raspberries fresh or frozen and thawed
  • ¾ cup Malibu or other coconut-flavored rum
  • ¼ cup granulated sugar
  • ¼ cup water
  • 5 teaspoons unflavored gelatin
  • Mint leaves, shredded coconut and raspberries, to garnish

Method
 

  1. Put the raspberries into your blender and blend on high speed until pureed. Strain the raspberries through a fine-mesh sieve to remove the seeds.
    ¾ cup raspberries
  2. In a medium-sized bowl, mix the raspberry puree and rum.
    ¾ cup Malibu
  3. Add the sugar and water to a small pot over low heat. Once the sugar dissolves, add the gelatin and stir until it dissolves.
    ¼ cup granulated sugar, ¼ cup water, 5 teaspoons unflavored gelatin
  4. Pour the gelatin water into the rum and raspberry mixture and mix well. Pour it into a small, shallow pan, then put the pan in your fridge for several hours, until the shots set.
  5. Cut it into squares or circles using a cookie cutter and garnish with shredded coconut and either a mint leaf or a raspberry
