Italian Aperol Mule

This Aperol mule is an Italian twist on the classic ginger cocktail. Bittersweet Aperol, fresh lime, and mint meet spicy ginger beer for a lighter, bubbly, and refreshing take on the original.

This Aperol mule is my bittersweet twist on the classic Moscow mule, and it might be my favorite way to enjoy that gorgeous bittersweet flavor in a fizzy glass. It's bright, bubbly, and beautifully refreshing, the kind of drink I love pouring on a warm afternoon or handing out when friends drop by. It feels a little more interesting than your average mule, without any extra fuss.

The flavor is where it really shines. Swapping the usual vodka for Aperol gives the drink a lighter body and a lovely bittersweet, citrusy edge. Fresh lime keeps everything tart and lively, mint adds a garden-fresh lift, and the ginger beer brings that signature spicy fizz. You get bitter and bright, spicy and crisp, all in one refreshing glass. I think it's worth splurging on a good quality ginger beer for mules, since a bolder, spicier one really makes the whole drink pop.

And it could not be simpler to make. A quick build over ice, a top of ginger beer, and a garnish of fresh lime and mint, and your Aperol mule is ready to sip. A copper mug is classic, but any large glass will do the trick.

Ingredients  

  • 2 ounces Aperol
  • 1 ounce lime juice
  • 4 ounces ginger beer
  • Lime slices and mint to serve

Method
 

  1. Fill a glass with ice, then add the Aperol and lime juice. Top with ginger beer, then give your mule a quick stir.
