Spicy Torchlight (Tequila and Cholula Cocktail)

Where the torchlight comes from

This one isn't a modern invention. The Torchlight was created at Little Branch in New York City, and it's built around a simple idea: honey doesn't just sweeten a spicy drink; it physically softens the heat. Honey coats your mouth in a way simple syrup and agave don't, rounding off the sharp edge of the Cholula instead of just covering it up.

The original is written for tequila or white rum, and both genuinely work. I go with tequila because the agave and the chili belong together, but if you've got a bottle of white rum open, it makes a slightly sweeter, softer version worth trying.

The cayenne goes on top, not in the shaker

The classic recipe shakes a pinch of cayenne in with everything else. I moved it to the garnish, and I'm not going back. Shaken cayenne never fully dissolves, so it leaves a faint grittiness in the glass, and once it's in there, the heat level is locked in for whoever's drinking it. Dusted over the top, it hits your nose first, then your lips, and everyone at the table can stir it in or leave it alone. If you're pouring for a group with different tolerances, this one change makes the drink far easier to serve.

About the honey syrup

Most versions of this drink have you dissolve a full cup of honey into hot water to make a batch of syrup. That's great if you're behind a bar and terrible if you want one cocktail on a Tuesday. A tablespoon of honey and a tablespoon of hot tap water gives you exactly what you need, no leftovers taking up fridge space, and it dissolves in about ten seconds.

Ingredients  

  • 1 tablespoon honey
  • 1 tablespoon hot water
  • 2 ounces tequila
  • 1 ounce lime juice
  • 6 dashes Cholula sauce
  • Cayenne pepper, fresh chili pepper, and lime wedge to garnish

Method
 

  1. Make the honey syrup by mixing honey and hot tap water in a small dish or glass.

Notes

Honey syrup: Use all of the syrup you make. A tablespoon of honey and a tablespoon of hot water is exactly one drink's worth.
Cayenne: I dust it over the top rather than shaking it in, so everyone can control their own heat.
Spirit: The original recipe works with tequila or white rum. Tequila is my preference, but rum makes a softer version.
