Apple Cider Mimosa (with a splash of bourbon)

This apple cider mimosa is made with apple cider, sparkling wine, and a splash of bourbon or spiced rum. It's crisp, cozy, and perfectly festive.

Three champagne flutes filled with a golden drink, garnished with apple slices and cinnamon-sugar rims, are placed among fresh apples and a bowl of brown sugar.

This apple cider mimosa is crisp, cozy, and just the right amount of festive. Fresh apple cider brings a sweet, orchard-fresh flavor, while a splash of bourbon or spiced rum (unusual in apple cider mimosa recipes), adds warmth and depth.

I love how the sparkling wine keeps it light and bubbly, balancing the cider's richness with a bright, refreshing finish. The cinnamon-sugar rim adds a hint of spice, making each sip feel a little extra special.

It's simple to mix but feels celebratory in the best way-perfect for fall gatherings or anytime you want something sparkling with a cozy twist.

How to make a pitcher of apple cider mimosas

If you're entertaining, it's easy to turn this recipe into a pitcher for parties by using cups instead of ounces. Use 2 cups of apple cider, ½ cup of bourbon (or spiced rum), and 2 cups of sparkling wine.

To make these mimosas ahead of time, rim the glasses with cinnamon sugar the day before your party and leave them on your counter. You can also add the bourbon and apple cider to a pitcher and refrigerate it. Right before serving, pour in the sparkling wine and serve!

Notes

the ingredients needed to make this recipe

What kind of sparkling wine works best with this recipe? I like making mimosas with brut as the drier taste is a nice balance with the sweet juice. If you prefer to sip something sweeter, go ahead and use prosecco or cava. For this recipe, a mid-priced bottle works best. Pick something that you'd enjoy sipping on its own but isn't overly expensive.
What's the best mimosa ratio? The perfect ratio of juice to sparkling wine is really up to you. In the recipe, I use a 50/50 ratio of apple cider to sparkling wine, so that's a good place to start. Then you can experiment by adding more or less juice depending on your taste.
Cinnamon sugar: Mix 1 ½ tablespoons of granulated sugar with 1 teaspoon of ground cinnamon.
