Watermelon Margarita

This watermelon margarita is one I make on repeat all summer long. It's bright, refreshing, and full of fresh watermelon flavor, with just the right balance of sweet and citrus.

I like to use simple honey syrup instead of orange liqueur, letting the watermelon really shine. Paired with fresh lime juice and tequila, it creates a cocktail that's crisp, juicy, incredibly easy to sip, and a nice change from a classic margarita.

Served over ice, it's light, vibrant, and perfect for warm days. Whether you're making one or a pitcher to share, it's the kind of drink that always disappears quickly.

Ingredients  

  • 2 cups watermelon chunks = 1 cup watermelon juice
  • Optional: 1 jalapeño pepper seeds and stem removed
  • 3 tablespoons honey
  • 5 tablespoons hot tap water
  • 1 cup tequila
  • ½ cup lime juice freshly squeezed, please!
  • Flaky sea salt to rim the glasses

Method
 

  1. Put the watermelon and jalapeño (if using) into your blender and blend on high for a few seconds.

  2. Whisk honey and hot tap water to make honey simple syrup.

  3. Combine the watermelon juice, tequila, lime juice, and honey simple syrup in a glass jar filled with ice and stir until the margarita is cold.

  4. Wet the rims of 4 glasses with lime, then dip them in salt, and pour in your watermelon margarita!

This recipe is very easy to scale up or down. Here's what you need to know:
  • 1 cup of watermelon chunks will make ½ cup of watermelon juice
  • Honey simple syrup is made with 1 part honey and 2 parts water. For example, 1 cup of honey and 2 cups of water.
  • This watermelon margarita is made with 2 parts watermelon juice, 2 parts tequila, 1 part lime juice, and one part honey simple syrup. For example, 2 ounces of watermelon juice, 2 ounces of tequila, 1 ounce of lime juice, and 1 ounce of honey simple syrup.
