Coconut Rum Mule
This rum coconut mule is a light, tropical spin on the classic. Coconut rum, fresh lime, and spicy ginger beer come together for a breezy, refreshing drink with lovely coconut flavor.

Coconut and lime were made for each other, and this rum coconut mule leans all the way into that pairing. It's light, tropical, and easy to love, a breezy little riff on the Moscow mule that trades the usual vodka for coconut rum and lets the ginger beer do what it does best.
Here's the choice I made that you won't find in most recipes: I leave out the pineapple juice. A lot of coconut rum mules call for it, and I do enjoy that version, but the pineapple tends to mute the coconut and nudge the whole thing toward piña colada territory. Without it, the coconut stays soft and clear, the lime keeps everything bright, and the ginger beer brings a warm, spicy fizz that ties it together. It's tropical, but crisp and grown-up rather than sweet and heavy.
Pour it over plenty of ice, top with cold ginger beer, and add a wedge of lime. That's really all there is to it, which is exactly what you want from a good mule on a warm afternoon.

Ingredients
- 2 ounces coconut rum
- 1 ounce lime juice
- 4 ounces ginger beer
- Lime slices and mint
