Beergroni (AKA: Beer Negroni)
The Beeroni is a casual beer lover's spin on a Negroni. Bittersweet Campari, rich sweet vermouth, and a pour of crisp lager come together in one easy, refreshing glass with none of the fuss.

The Beeroni is my casual, beer lover's spin on a Negroni, and it might be the easiest way I know to enjoy those classic bittersweet flavors. It's crisp, refreshing, and pleasantly bitter, the kind of drink I love pouring on a relaxed evening when I want something with a little complexity but none of the fuss. If you're a fan of a good Negroni sbagliato, this one is right up your alley.
The flavor is all about that signature Negroni balance, made lighter and more drinkable. Campari brings its bittersweet, citrusy bite, sweet vermouth rounds it out with a touch of richness, and the beer takes the place of gin, adding crisp carbonation and an easygoing, refreshing finish. I like to use an Italian lager like Peroni to keep with the drink's roots, but any clean, light lager works well here. The reason lager is the move rather than an ale or a wheat beer is that its neutral, malty backbone doesn't compete with Campari's bitterness the way a hoppier or fruitier beer would. It just lets the amaro and vermouth do the talking while adding lift and fizz in place of the gin. You get bitter and bright, rich and crisp, all in one tall, fizzy glass, and this Beeroni recipe keeps that balance without any guesswork.
And it could not be simpler to make. A splash of Campari and vermouth over ice, a pour of cold beer, and your Beeroni is ready to sip, no cocktail skills required.
