This dandelion margarita is my kind of spring dandelion cocktail-fresh, a little playful, and full of bright flavor. It's made with tequila, lime, and a dandelion-infused syrup that adds a soft, floral sweetness without overpowering that classic margarita zing.

What really makes this one special is the rim. I brush the glass with a little honey (it works so much better than lime) and dip it into a mix of salt, sugar, and dandelion petals. It gives you that perfect sweet-salty balance and looks so pretty in the glass.

Finished with a whole dandelion flower on top of the cocktail, it's simple, seasonal, and just a little magical-the kind of drink that feels right at home on a sunny spring day.

Ingredients  

  • 2 ounces tequila
  • 1 ounce dandelion syrup see notes
  • 1 ounce lime juice
  • Dandelion flower for garnish
Dandelion Rim
  • 1 tablespoon fine sea salt
  • 1 tablespoon granulated sugar see notes
  • Petals from two dandelion blossoms

Method
 

  1. Start by making the rim. In a shallow dish, mix the salt, sugar, and flower petals. Wet the rim or side of a glass (use a cut lime or brush on a bit of honey), and then dip it into the dish.

  2. Add ice, tequila, dandelion syrup, and lime juice to a cocktail shaker and shake until cold.
