This tequila swampwater is the drink I want in my hand the second the weather turns warm. Don't let the name fool you, it's bright, light, and incredibly refreshing, the kind of tequila cocktail you'll happily sip on a hot afternoon in the backyard or pass around at a summer get-together. It pours a pretty sunny yellow and comes topped with fresh mint and lime, which makes it feel like a little vacation in a glass.

The flavor is where it really wins me over. Tequila and herbal green Chartreuse give it a complex, slightly botanical backbone, while sweet pineapple and tart lime keep everything fresh and lively. A tiny pinch of salt pulls it all into focus, so you get herbal and bright, sweet and tangy, all in one easy sip. It tastes far more interesting than the short ingredient list would suggest.

Ingredients  

  • 1 ounce silver tequila
  • 1 ounce green chartreuse
  • 4 ounces pineapple juice
  • ½ ounce lime juice
  • Tiniest pinch of salt
  • Fresh mint and lime wedge to serve

Method
 

  1. Fill a cocktail shaker with ice, add the tequila, green chartreuse, pineapple juice, lime juice, and a tiny pinch of salt, then shake until cold.

  2. Strain into a tall, ice-filled glass.
